Pastry Chef Cassia Allen and Rachel Rainwater, Fairmount Hotel
One of the absolute must-visit stops on the tour this year is the historic Fairmount Hotel. Famous for holding the Guinness World Record as the heaviest building ever moved intact, this iconic downtown boutique jewel is a piece of living San Antonio history. With its lush courtyard and timeless, laid-back luxury, it’s the ultimate backdrop for an evening of high-level sipping.
Behind the stick at the Fairmount is someone who needs little introduction to regulars of the Tour: Rachel Rainwater.
A seasoned veteran of the Brandy Alexander Tour, Rachel has a reputation for churning out wildly creative takes on the classic drink year after year. Her philosophy behind the bar is simple—keep the program fun, approachable, and never overly restrictive. While she’s mixed up plenty of crowd-pleasers in the past, she’s gone on the record to say that this year’s entry is officially her all-time favorite.
Introducing the Lemon Silk Alexander. If you’re wondering where Rachel gets her stroke of genius, you can thank her global snack subscription box. A delicious Dutch cookie from a recent delivery sparked the initial idea, leading to a cocktail that is anything but ordinary. Mixed with Kinsman Rakia, rich coconut cream, white crème de cacao, bright lemon juice, and simple syrup, the drink is finished with a dusting of grated white chocolate that has been infused with cinnamon and nutmeg.
On the palate, the lush sweetness of the cacao and coconut cream is immediately brightened by the tart punch of fresh lemon, while the spiced white chocolate aromatics bring a warm, subtly savory finish to every sip. Even better? Because it uses coconut cream as its base, this silky concoction is completely dairy-free, adhering to Rachel’s mission of making sure everyone can join in on the fun.
Of course, a cocktail inspired by a cookie deserves a world-class baked good on the side. For the edible garnish, Rachel collaborated with the Fairmount’s talented pastry chef, Cassia Allen. Hailing from Harlingen, Cassia attended UTSA, where she majored in art with a focus on ceramics and painting. It turns out that fine art translates beautifully to the pastry kitchen. Cassia brings eight years of professional baking experience to the table—including a stint in New Mexico crafting treats for a gourmet medical cannabis edible manufacturer!
Though her latest creation for the tour is strictly buzz-free, unfortunately, it is dangerously addictive. Cassia has crafted a delicate, buttery lemon shortbread cookie topped with decadent white chocolate icing. Perched alongside the glass, it mirrors the bright, creamy notes of the Lemon Silk Alexander and turns a simple drink order into a full-blown dessert experience.
You don’t want to let the tour wrap up without crossing this duo’s creation off your list. Grab all your friends, head downtown to the Fairmount Hotel, and order yourself a Lemon Silk Alexander, nibble on Cassia’s incredible shortbread cookie, and toast to another delicious year of the Kinsman Brandy Alexander Tour!
