Nestled up at La Cantera Resort and Spa, Signature is a destination in itself. It's in this beautiful environment that we meet the man behind the shaker, Alexander (Zander) Schaefer.

Zander’s a proud San Antonio native and a massive Spurs fan who believes his hometown is one of the most underrated cities in the country (we couldn't agree more). Having been at Signature for four years, he recently moved into his bartending role six months ago and is absolutely thriving. When he's not crafting cocktails for patrons, he might be enjoying a crisp Basil Gimlet or a good Grenache—that is, when he's not making a late-night run for some Taco Bell.

For the Tour, Zander created a drink he calls Chasing Riches. The name is a nod to the decadent, dessert-like nature of the classic cocktail. His version, however, is a complex and delightful departure. Zander’s goal was to amplify the stone fruit notes of the Kinsman Rakia, which he accomplished by adding the peach liqueur. The espresso, he notes, masterfully rounds out the sweetness and adds a rich depth to the profile. On the first sip, you're greeted with luscious apricot and peach, which then melds into a creamy, white chocolate-and-vanilla body, finishing with a lovely hint of roasted coffee. It's rich, but impeccably balanced.

A great cocktail is often made even better with a perfect partner, and Zander found his in pastry chef Delaney Dennis. In a fun twist, Zander and Delaney have a shared history; both have been at Signature for four years and even attended the same high school right here in San Antonio! For her part of the collaboration, Delaney, a coffee aficionado who dreams of one day opening her own pastry and coffee shop, created a truly inspired "edible moment."

She baked a spiced gingerbread cookie. Perfectly timed for the holiday season, the cookie has a gentle warmth from cayenne pepper, which she chose specifically to cut through the richness of the heavy cream in the cocktail. For a final festive touch, it’s adorned with crystallized sugar and a delicate white chocolate drizzle.

1 oz. Kinsman Rakia
1 oz. Heavy Cream
3/4 oz. Mozart White Chocolate Liqueur
1/2 oz. Estate Coffee Co. Espresso
1/4 oz. Licor 43
1/4 oz. Giffard Pêche de Vigne Liqueur

Instructions. Combine all ingredients in a tin over ice. Shake vigorously. Double strain into a Nick and Nora.

Garnish. Spiced gingerbread cookie.
